Good Old Chicken Pot Pie

Decided to share a favorite recipe of ours, chicken pot pie. Since today is cold and snowy ( yes it’s the end of March and we are still getting snow…) I figured it was a great day to pull out a recipe that is full of comfort, warmth and oh so good for the soul. I hope you enjoy it as much as we do. I probably make this every other month or so. It’s easy, cheap and a great way to use up extra chicken you have on hand ( whether breast or thighs). I have also made this recipe with left over turkey and it was delish!

So here ya go!

ingredients
1 lb chicken, cooked and diced
1 c carrots
1 c corn
1 c peas
2 red skinned potatoes diced
1/3 c butter
1/3 c flour
1/2 tsp salt
1/4 tsp pepper
1/4 tsp celery seed
1/4 tsp rosemary
1 3/4 c chicken broth
2/3 c milk

Crust
1 1/2 c ap flour
1/2 c ww flour
1/2 tsp salt
1/3 c butter, softened
6 TB water

In a large pot bring vegetables and potatoes to a boil. Let boil for 10 minutes ( you don’t want the potatoes too soft since they’ll be cooking in the oven). Drain and add chicken. In a large sauce pan melt butter over medium heat. Whisk in flour and spices. Slowly stir in chicken broth and milk. Bring to a boil, then reduce to thicken.

Add in chicken and vegetable mixture.

Set aside and make crust.

Mix flours and salt together. Cut in butter with a pastry cutter. Then slowly add in water, 1 tablespoon at a time, until desired constancy. Once mixture forms a nice ball, divide in half.

On a floured piece of wax paper roll out dough. Gently place dough into pie pan and carefully take off wax paper.

Then, cover with remaining pie crust layer. And pierce top.

Place pie in a 425 degree oven for 30 minutes and there you have a wonderful meal for a cold day!

It is a staple over here. And according to Liesel in her preschool ” all about daddy” sheet, it’s his favorite meal😊😂
