It’s Fat Tuesday aka Paczki day!. I’ve always loved a good jelly donut so naturally paczkis have also been high on my list. Preferably ones filled with a berry filling. Mmm mmm mmm. Each year on Fat Tuesday we flock to the grocery store in search of this delicious treat. This year I decided I’d try to make them from scratch. Was I crazy?! How hard could they be?
After sorting through recipe after recipe, some called for like 20 eggs… I finally found one I wanted to try. It took a fair amount of time, but the outcome was worth it! Our family loved indulging in this special dessert this morning. Quite possibly a new tradition over here at the Statlers😃
1 1/2 c milk
2 pkg dry active yeast
1/2 c sugar
1/2 c butter, softened
1 whole egg
2 tsp vanilla
1/2 tsp salt
4 1/2 c flour
Jam for filling
Oil for frying
On the stovetop scald your milk. Let cool to lukewarm and add in yeast, mixing with a whisk.
In your stand mixer mix butter and sugar until fluffy. Add in eggs, vanilla and salt. Mix well. Then slowly add in flour and milk mixture. Mix until combined.
Once combined cover and set in a warm place to rise. It took me an hour to have it doubled in size.
Next pour risen dough on a floured surface. Roll out until 3/4 inch thick. Then cut into 1 1/2 inch circles. The tops of our cups worked great!
Let dough rise again for another 1-1 1/2 hours, until doubled in size. Once dough is ready, heat oil in large stock pot to 375 degrees. Gently place dough into hot oil. I put about 4 in at a time.
Once cooled it’s time for the filling. We chose raspberry preserves. The recipe calls for a pastry bag to fill your Paczki. Not owning one, I problem solved using a plastic baggy and a wooden kabob skewer 😉 Worked like a charm!
Sprinkle with a little confectioner sugar. And there ya go! So yum!!
